Organic Bickford
Bickford is a Hard Red Winter Wheat variety developed in collaboration with Cornell University, UW-Madison, the Artisan Grain Collaborative, and a network of farmers, bakers, and advocates. Bickford wheat stands strong in the field, thrives on organic farms, offers abundant yields, and baking versatility. Excellent for making a flakey pastry and a delicious loaf of bread. Named in honor of our late mentor Paul Bickford’s contributions to organic systems and innovation, may this variety serve farmers and nourish our community.
Bolted flour is sifted through a fine mesh screen to remove a portion of the bran, while retaining the nutritious germ and energy dense endosperm. Remaining bran particles are full of fiber and produce a light cream colored flour.
Whole Wheat flour contains 100% of the wheat- the nutrient dense germ, starch filled endosperm, and fiber rich bran.

Our flours are all stone milled which preserves the integrity and nutritional value of the grain. Best within 6 months - refrigerate or freeze for longer storage.
